Open-Faced Prosciutto and Plum Sandwiches

So simple and super satisfying, this sandwich just takes minutes to make and will leave your taste buds wishing for more the next day. No cooking involved! Perfect for when you’re hungry and already just want to being eating already. Just mix and assemble and minutes later you’re done. The original recipe included ginger but sometimes I’m lazy to grate the ginger and happy with fig preserves with the lemon juice. 😛 I imagine strawberry or raspberry preserves would be great substitutes although would make the flavors sweeter. Add a side for a full meal. Combo is also perfect on crostini if looking for an appetizer.

Total Time: ~ less than 10 minutes

Ingredients (serves 2):

1/4 cup fig preserves or fig butter
1 tablespoon fresh lemon juice
1/4 teaspoon grated peeled fresh ginger (optional)
1/3 cup (3 ounces) soft goat cheese
4 (2-ounce) slices country wheat bread, toasted
1 cup loosely packed arugula
2 ripe plums, cut into thin wedges
3 ounces very thin slices prosciutto


  1. Combine fig preserves, lemon juice, and ginger (if included) in a small bowl and whisk together.
  2. Spread desired amount of goat cheese on to each slice of bread.
  3. Divide arugula, plums, and prosciutto evenly and drizzle about 1 tablespoon of the fig preserve mixture over each slice of bread.
